You’ll need:
- 1 head broccoli
- 1 head cauliflower
- 1 12 oz. bag baby carrots
- 8 oz. radishes
- 2 shallots
- 1 16 oz. package bacon
- 1/2 cup sunflower seeds
- 1 cup freshly shredded cheese
- Ranch dressing mix
- 1 cup milk
- 1 cup mayo
- Italian seasoning to taste
- Fresh or dried dill to taste
Get started:
- Combine the ranch dressing, milk, and mayo in a bowl and stir thoroughly, then cover and refrigerate. Fry bacon until crispy and set aside to cool.
- Finely chop broccoli and cauliflower florets. Thinly slice baby carrots. Thinly slice radishes and cut into quarters. Shred 1 cup of cheese using a grater. Finely chop shallots. Combine all veggies in a large bowl and add cheese.
- Finely chop cooled bacon, then add to the bowl. Add sunflower seeds. Finely chop fresh dill and add to mixture (or add dried dill). Add about 1 teaspoon of Italian seasoning to the salad to taste.
- Add chilled ranch to the salad and mix thoroughly.
